A little giant puffball


The flesh of the little giant puffball Lydia holds is firm and thus perfect. The slicing might be less perfect but neverthless it's alright. The pieces are max. 1 - 1,5 cm (1/2 - 3/4 inch) thick and turned in breadcrumbs. Fry gently for a couple of minutes in unsalted butter, garnish with a little bit of parsley and finely chopped vegetable and serve this great delicacy. Add salt to taste. Always keep it as simple as possible. It's the quality of the mushroom that counts and not that of a super-duper sauce which overpowers the taste of the mushroom.
